This is such a
cute looking breakfast or brunch item. I can’t remember where I found this
recipe, but, it has been in our regular rotation for breakfast for a while now.
INGREDIENTS
2 teaspoon olive
oil
1 bell pepper,
any color, cut into 4 1/2 inch thick rings
4 eggs
1/4 cup real GF
bacon bits
Sea salt
Ground pepper
2 teaspoons
parmesan, grated
4 Romaine leafs or
lettuce of choice
DIRECTIONS
In large
non-stick skillet, heat oil over medium-high.
Add bell peppers.
Add one cracked
egg along with 1 tbsp bacon bits per egg.
Season with salt
and pepper and cook until egg whites are mostly set but yolks are still runny,
2 to 3 minutes.
Gently flip and
cook one more minute for over easy.
Place egg atop
romaine leaf.
Sprinkle with
parmesan.
