Almond Carrot Muffins

I found the recipe for  these muffins at recipezazz. My friend Bergy posted them there for me to try. She writes "My hairdressers Larry and Gerry are fabulous cooks and they love cooking. They are now living wheat free, look and feel great. This is one of their recipes. Because these muffins are gluten free they don't rise very much"
Well rise or no rise, they taste delicious!!


INGREDIENTS
2 1/2 cups almond flour
1 cup carrots (grated)
3 eggs
1/2 cup applesauce
1/4 cup melted coconut oil
1/4 cup honey (or maple syrup)
1/2 teaspoon baking soda
1/4 teaspoon sea salt

DIRECTIONS
Preheat oven to 350 F.
Combine all the ingredients.
Put in lined muffin tin.
Bake for 20-25 minutes.
