Tomato Cabbage Soup

My daughter recently asked me to show her how to make my tomato and cabbage soup. This soup was something I just usually tossed together and never measured until she came over and we made it together. It is a hearty; warm your innards kinda soup we enjoy in the fall and winter. This soup freezes well so I like to freeze it in individual portions for quick work lunches.

1 1/2 pound diced tomatoes
1 pound chopped cabbage
1/4 pound chopped carrots
1/4 pound chopped celery
1 chopped onion
8 cups GF vegetable broth
2 teaspoons ground ginger
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon ground allspice

Place all the ingredients in a large heavy bottom pot and bring to a boil on the stove-top
Reduce heat to medium-low, cover and simmer for a couple of hours.
Ladle into bowls and enjoy.
