Grilled Tomatoes

This is a great way to enjoy those fresh tomatoes during tomato season. It is quick and easy to put together and you will love every bite of these. I sometimes change it up by using fresh cilantro or fresh basil instead of oregano, all work well in this recipe.



INGREDIENTS
8 ounces plum tomatoes (4 tomatoes)
1 tablespoon vegetable oil
1 clove garlic processed through the garlic press
2 stems fresh oregano
Salt to taste
Pepper to taste

DIRECTIONS
Slice the tomatoes in half and place them in a bowl, add the remaining ingredients and toss to coat.
Place the tomatoes on a preheated grill and cook for 2 to 3 minutes per side or until tomatoes just start to soften.
Remove from grill, return to bowl and gently toss to collect any of the oil, oregano and garlic left in bowl.
Enjoy!
