Tomato, Basil and Mozzarella Skewers

This is a great appetizer I like to start off an Italian feast with. They disappear in no time. These are also great to bring to a pot-luck dinner.

18 cherry tomatoes
18 cubes mozzarella
18 basil leaves
18 toothpicks
2 tablespoons balsamic vinegar
1 teaspoon olive oil
1 clove garlic
1/4 teaspoon kosher salt

Skewer 1 cube of cheese, 1 basil leaf and 1 cherry tomato onto each of the toothpicks and place on a serving plate.
Crush the clove of garlic and the salt with a mortar and pestle until you have a paste; mix with the balsamic vinegar and oil.
Drizzle over the skewers and serve.

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure.
