Chickpea Salad

A lovely refreshing salad I enjoy on it's own or as a side dish.

1 can chickpeas
1 carrot, sliced
16 grape or cherry tomatoes, cut in half
1 small clove garlic, pressed
1 shallot, diced
juice of 1 lemon
2 teaspoons olive oil
1 teaspoon ground cumin
1/4 teaspoon ground coriander
2 tablespoons fresh cilantro, chopped
garam masala to taste
sea salt to taste
fresh ground pepper to taste

Mix all the ingredients together in a large bowl and refrigerate for a couple of hours before serving.
