2 tablespoon vegetable oil
6 ounces fresh baby spinach
6 ounces mushrooms
1 leek, cleaned, green and white parts
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt, to taste
Pepper, to taste
Drizzle oil over bottom of a large skillet and bring to medium heat.
Add the leeks mushrooms, smoked paprika and garlic powder.
Cook until leeks are translucent.
Rinse spinach and add to skillet.Cook until soft and season with salt and pepper to taste.
