1 (19oz) can white kidney beans
1/4 cup GF chicken broth
1 tablespoons lemon juice
1 teaspoon fresh rosemary, chopped
2 cloves garlic
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons extra virgin olive oil
Place all the ingredients except the olive oil in a food processor and pulse a few times until beans start to break up.
With food processor running, slowly add the olive oil and continue to run until mixture is pureed.
Refrigerate a couple of hours before serving to allow the flavours to meld.Serve with your favourite crackers.
