Brussels Sprouts in Bacon Sauce

This is a lovely side dish for Brussels Sprout lovers. I’m the only who eats Brussels sprouts at home, so I usually have this as main dish for myself!!

INGREDIENTS
1 pound Brussels sprouts
4 slices GF bacon
1 small onion, chopped
1/2 cup sour cream
1 tablespoon GF all-purpose flour
1/8 teaspoon salt
pepper, to taste

DIRECTIONS
Trim stems and outer leaves from sprouts.
Boil or steam, covered, for 10 minutes, or until crispy-tender.
Cook bacon until crisp; remove from pan and drain, reserving 1 tbsp of fat from pan.
Add onion and sauté until tender, about 5 minutes.
Combine sour cream, flour, salt and pepper.
Stir sour cream mixture into onion; add crumbled bacon and heat sauce through. When sprouts are done, drain well, top with sauce and serve.
