Pulled Pork Stuffed Bellas

The last time I served pulled pork sandwiches I was counting calories so I had my pulled pork stuffed in a grilled portabella mushroom. It was divine and I did not miss the bun one bit!! By omitting the bun you also reduce the carbs. Here is the quick and easy recipe for my pulled pork stuffed bellas.





INGREDIENTS
1 portabella mushroom
3 ounces smoked pork
2 tablespoons water
1 tablespoon GF BBQ sauce
1/4 cup coleslaw
2 pickled jalapeño pepper slices

DIRECTIONS
Place the pork, water and BBQ sauce in a small pot and bring to a boil; reduce heat and simmer for a few minutes.
Meanwhile grill the mushroom over direct heat until it is softened.
Spoon the pulled pork mixture over the cooked mushroom.
Top with coleslaw and a couple of pieces of pickled jalapeños.
Enjoy!
