Cocoa Crusted Salmon

This recipe is great for those who do not like the strong taste of salmon. The cocoa works perfectly making  the salmon less fishy tasting.

INGREDIENTS
12 ounces salmon fillet, skin off
2 tablespoons vegetable oil
2 tablespoons brown rice flour
1 tablespoon cocoa powder
1 teaspoon ginger
1 teaspoon sugar
1/2 teaspoon garlic powder
Salt to taste
Fresh ground pepper to taste

DIRECTIONS
Whisk together the flour, cocoa powder, ginger, sugar and garlic powder, set aside.
Pour the oil into a skillet and bring to medium-high heat.
Meanwhile, season the fillet with salt and pepper, and dredge into the flour mixture coating both sides.
Place the fillet in the skillet and cook until fish flakes easily when poked with a fork, about 3-5 minutes per side depending on thickness of fillets.
