Yellow Pickled Eggs

These are always a hit and a great conversation piece. There are always questions about how they became yellow.


INGREDIENTS
12 boiled eggs, shells removed
1 onion, sliced
2 cups vinegar
1 cup water
1 tablespoon pickling spices
1 tablespoon salt
2 teaspoons sugar
1/2 teaspoon turmeric
1 bay leaf

INGREDIENTS
Mix together the water, vinegar, salt, sugar, turmeric and pickling spice in a saucepan and bring to a boil.
Reduce heat and simmer for 15 minutes; cool completely.
Place the onions, bay leaf and eggs in a jar and pour cooled liquid over the eggs making sure they are completely covered.
Refrigerate for at least 5 days before serving, these get tastier the longer they sit in the jar.
