Gerry's Salmon and Veggie Skewers

This is recipe I copied from one of my cooking buddies over at RecipeZazz, Gerry. I did make a few slight changes to the original recipe, only because I was serving this as a meal instead of appetizers. These are great tasting and easy to throw together.

Ingredients
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons balsamic vinegar
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 pound salmon, deboned and cut into 1 1/2 inch cubes
12 to 14 cherry tomatoes
1 green pepper cut into bite sized pieces
1 sweet white onion cut into bite sized pieces

Directions
If using wooden skewers soak in warm water for 30 minutes.
Whisk all the wet ingredients together in a large non-reactive bowl.
Add the remaining ingredients and mix to combine all the ingredients.
Place in the refrigerator for a few hours.
Carefully place the salmon cubes on 2 skewers.
Place the onions, peppers and tomatoes on 2 skewers.
Place the skewers on a rimmed baking sheet that has been coated with non-stick spray.
Place the baking pan on the top rack of the oven and broil checking every 2 minutes.
Turn the skewers over after 4 minutes, after another 4 minutes the vegetable skewers should be done and after another 2 minutes the salmon skewers should be done. Please keep in mind that the cook time will vary from one oven to another and also depending on how thick the salmon pieces are, so keep a close watch.
