Italian Meatballs

I make loads of these at a time and freeze them in freezer bags for future use. These are great for meatball sandwiches, spaghetti and meatballs, meatballs and gravy, sauced meatballs or just about any recipe that calls for the addition of meatballs.

INGREDIENTS
2 pounds ground beef
2 slices gluten free white bread
1/2 cup milk
2 garlic cloves (finely minced)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon onion salt
1/2 teaspoon thyme
1/4 teaspoon pepper
1/4 cup dried onion flakes
1/2 cup parmesan cheese
3 eggs

DIRECTIONS
Preheat oven to 350 degrees.
In large bowl, line slices of bread, cover with milk and let soak for 1 minute.
With electric blender, mix until mushy and well blended.
Add remaining ingredients and mix well with hands.
Shape into 1 inch balls and place on rimmed baking sheet and cook for 30 to 40minutes, until done.

  1. These are easy to make and I love that they are baked and not fried. We used them in a big plate of spaghetti and meatballs. Seemed like lots of the parmesan melted out while cooking, but enough stayed in the meatballs to flavor them. We really enjoyed them. All the spices worked perfectly together. Thanks for sharing!
