This is one of those things you just toss together without a recipe... Well I took the time to jot it all down this time so others could enjoy this as much as we do. The meat turns out so tender and moist and the veggies are loaded with flavour.
NGREDIENTS
1 (3-4 pound) pork picnic roast
3-4 medium potatoes, diced
2 carrots, chopped
2 cloves garlic, chopped
1 vegetable bouillon cube
2 cups hot water
1 (15 ounce) can diced tomatoes
1 teaspoon dried oregano
2 bay leaves
salt, to taste
fresh ground pepper, to taste
DIRECTIONS
Pour the canned tomatoes and water into the crock-pot and
stir in the bouillon cube.
Add the potatoes, carrots and garlic and place the roast on
top.
Add the bay leaves and sprinkle with the oregano, salt and
pepper.
Cover the crock-pot and cook on low for 8 hours or on high
for 4 hours.
