Turkey Bacon Meatloaf with Attitude

I find ground turkey usually turns out so dry and gritty and usually quite bland. By adding minced bacon to the ground turkey you get a moist and juicy loaf and it adds some great flavor, also the addition of rice absorbs the fat from the bacon and keeps the loaf together quite nicely. This is on the spicy side which is how we like it but you can easily tone this down by decreasing the hot pepper flakes.


INGREDIENTS
1 pound ground turkey
1/4 pound bacon, minced
4 cloves garlic processed through garlic press
1/4 cup minced onion
1/4 cup GF instant rice
1/2 tablespoon GF chicken bouillon granules
1/2 teaspoon hot pepper flakes
1/4 cup mayonnaise
2 to 3 tablespoons freshly grated parmesan cheese
2 tablespoons Frank’s RedHot sauce

DIRECTIONS
Mix together the ground turkey, minced bacon, pressed garlic, minced onion, rice, chicken bouillon granules and hot pepper flakes and place in the refrigerator for 4 hours to allow the flavours to meld.
Line a rimmed baking sheet with foil, coat with non-stick spray, shape the meat mixture into a loaf and place it on top of foil.
Mix together the mayonnaise, parmesan cheese and hot sauce and set aside.
Place in a preheated 350 degree Fahrenheit oven and cook for 45 minutes, remove from oven and brush the meatloaf with the mayonnaise mixture, return to oven and cook for another 15 minutes.
Cover loosely with foil and allow cooling for 10 minutes before slicing into the meatloaf.

  1. Enjoyed this, a different meatloaf!!! This is nice to make even just for the two of us since it makes great sandwiches for the next day or two!! We really enjoyed the bit of heat in this, and I loved the parmesan mayo topping, for me this was a huge success. Thanks for sharing!!

  2. I like the ingredients and we enjoy spicy. This recipe makes a good variation of meatloaf. My family wasn't too crazy about it, but I enjoyed the change of pace. Thank you, LifeIsGood
