Roasted Citrus and Rum Chicken Thighs

My favourite part of the chicken is the thighs because they always turn out so tender and juicy. You generally don’t need to marinate thighs to tenderize them but this marinade sure adds loads of flavour to these babies!!

INGREDIENTS
2 pounds chicken thighs (bone in, skin on)
Juice of 1 orange
Juice of 1 lemon
1 small onion, chopped
4 cloves garlic, crushed
1/4 cup dark rum
3 tablespoons brown sugar
3 tablespoons vegetable oil
1/2 tablespoon jarred minced ginger
1/2 teaspoon hot pepper flakes
1/4 teaspoon ground cloves
Salt to taste
Pepper to taste

DIRECTIONS
Place the orange juice, lemon juice, onion, garlic, rum, brown sugar, vegetable oil, ginger, hot pepper flakes and ground cloves in a large re-sealable plastic bag and mix well.
Add the chicken pieces and swish together to coat the chicken with marinade; refrigerate for 6 hours.
Pour the contents of bag into a casserole dish, season generously with salt and pepper and place in a preheated 350 degree Fahrenheit oven and cook uncovered for 45 minutes or until cooked through.

I really enjoyed the chicken thighs...the hubby not so much...I did throw them under the broiler for a couple of minutes to crisp up the skin...the meat came out so tender...I guess this is one of the recipes I get to make when the hubby is out of town...made for "For Your Consideration" tag game...
