Dilled Romaine Salad with Apples


This is a quick salad to put together and it tastes great. Make sure you use a crisp sweet apple such as Fuji or Gala for this salad. If you are not fond of raisins, you can use dried cranberries or simply omit them.


1 (8oz) package chopped romaine leaves
1/2 sweet onion, thinly slice
1 sweet apple, thinly sliced with peel on
1/3 cup raisins
Juice of 1 lemon (do not used jarred, it is too tart)
2 cloves garlic, pressed
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon fresh chopped dill or 1 teaspoon dried dill
1/2 tablespoon GF old fashioned grainy mustard
1 teaspoon GF Dijon mustard
1/8 teaspoon sea salt

DIRECTIONS
In a large bowl whisk together the lemon juice, garlic, olive oil, honey, dill, grainy mustard, Dijon mustard and salt.
Toss with the remaining ingredients.
Enjoy!
