1 cup yellow mustard
1 cup light brown sugar, packed
3/4 cup cider vinegar
1/4 cup water
2 tablespoons chilli powder
1 1/2 teaspoons black pepper
2 teaspoons garlic powder
1/4 teaspoon cayenne (add in more if you want more heat)
1 teaspoon GF seasoning salt
1/2 cup GF beer (I use New Grist)
1/2 teaspoon GF soy sauce
2 tablespoons butter
1 tablespoon liquid smoke
Mix the first 9 ingredients together and simmer for 30 minutes.
Add the remaining ingredients and simmer an additional 10 minutes (the vinegar smell and flavour will be strong until it cools and chills for 24 hours).
Cool completely, pour into jars and keep refrigerated.Enjoy!
