Amazing Caesar Salad Dressing

This is a recipe my Mother used to make when she was a chef at a local restaurant. Make sure you use the Hellman’s brand mayonnaise or it will not taste right. Hellman’s is Best Foods brand mayonnaise for my American friends.

INGREDIENTS
1/2 cup Hellman’s mayo
2 tablespoons GF powdered chicken soup base
1/2 teaspoon oregano
3 slices anchovies
1 teaspoon lemon juice
1/2 cup vinegar
1 1/2 cups corn oil
2 tablespoons parmesan cheese
1 tablespoon parsley
1 teaspoon dry mustard
3 eggs
8 cloves garlic, minced
1/2 teaspoon garlic salt
1 (475 ml) GF bottle blue cheese dressing

DIRECTIONS
Mash the anchovies into a paste with a sturdy fork and place in a blender with all the ingredients.
Puree until well blended and creamy.
This keeps for 5 days in the refrigerator.



Makes 1.5 litres

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure. If in doubt, call the toll free number on packaging to be safe and to make your cooking/eating experience is truly gluten free.
