Pan Fried Salmon

This is a great salmon recipe my family really enjoys. It is quick and easy to put together and is perfect for a busy weeknight dinner.



INGREDIENTS
1 pound skin on salmon
1 teaspoon Emeril Essence
2 cloves garlic
1/4 teaspoon kosher salt
1 tablespoon vegetable oil

DIRECTIONS
Crush the garlic and salt together into a paste with a mortar and pestle and rub over the meaty part of the salmon.
Sprinkle the Emeril Essence over the meaty part of the salmon and let sit for 10 minutes.
Heat the oil in a skillet over medium-high heat and place the seasoned side down into the skillet; cook uncovered for 5 minutes or until you have a nice thin crust over the fish.
Turn the fish over skin side down and add 2 tablespoons water, cover and cook for another 3-5 minutes or until fish is cooked through and flakes when poked with a fork. (This will depend on how thick your fish pieces are)

  1. Very simple and direct recipe which is especially welcome after holiday over indulgences. This was very nice with a fresh a Brussels sprout and carrot combo.
