Banana Oatmeal Breakfast Cookies with Walnuts -Only 3 Ingredients

I saw this recipe circulating on Facebook recently and had to give it a try. The original posted recipe called for only two ingredients, bananas and oats, it was really good but I felt it needed a little crunch so the next time I made them I added chopped walnuts and I was quite pleased with the end result. These are not overly sweet so they are a perfect quick, on the go breakfast item. This recipe is one you could have fun with by adding whatever tickles your fancy, like dried fruit or seeds.

1 cup old fashioned rolled oats
2 ripe bananas
2 tablespoons chopped walnuts

Mash the bananas in a bowl.
Add the remaining ingredients and mix well.
Place six 1/4 cupful of the mixture on a parchment paper lined baking sheet and lightly press down with a fork.
Place in a preheated 350 degree Fahrenheit oven and bake for 15 minutes.
Remove from oven and cool completely.

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure. If in doubt, call the toll free number on packaging to be safe and to make your cooking/eating experience is truly gluten free.
