1 sweet potato (about 12 ounces)
2 tablespoons vegetable oil
1 clove garlic, pressed
1/2 teaspoon dried basil
1/2 teaspoon GF soy sauce
1/2 teaspoon lemon juice
sprinkle of parmesan cheese (Optional)
Peel the sweet potato and slice it into 1/2 inch thick rounds.
Mix all the ingredients together in a large bowl.
Line a rimmed baking sheet with foil and place 1 layer of sweet potato rounds on top of the foil.
Bake in a 375 degree Fahrenheit oven, until cooked through, turning every 15 minutes.
Sprinkle with parmesan cheese if using.Enjoy!
