Pork Fried Rice

This is one of my favourite fried rice recipes. It is quick and easy to put together and always gets gobbled up. I use my own recipe for Asian seasoning for this, but feel free to use your favourite.


INGREDIENTS
1 cup GF vegetable stock
1 cup GF instant rice
1 teaspoon dried parsley
1/2 pound pork
2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, diced
2 teaspoons Asian seasoning
soy sauce to taste

DIRECTIONS
Bring the broth to a boil in a medium saucepan, remove from heat and add the instant rice and parsley; cover and set aside.
Bring the oil to medium-high heat in a large skillet.
Add the pork, onion, bell pepper and Asian seasoning.
Cook until pork is cooked through, about 8 minutes; add salt to taste.
Toss in the cooked rice and heat through.
Season with soy sauce to taste.
Enjoy!
