Turmeric Rice and Beans

This is a rice recipe I like to serve with Caribbean dishes such as jerk chicken or fish. It is very easy to put together, the rice cooker does it all. You can use chicken bouillon powder instead of the vegetable bouillon powder if you prefer.



INGREDIENTS
1 cup dry jasmine rice
1 cup canned black beans, rinsed and drained
3/4 cups water
1/2 cup coconut milk
2 teaspoons coconut oil
2 teaspoons vegetable bouillon powder
1 clove garlic processed through garlic press
Dash dried ground turmeric
Dash dried ground ginger
Dash dried ground allspice
Pinch dried ground nutmeg

DIRECTIONS
Rinse the rice until water runs clear.
Place all the ingredients together in a rice cooker, turn on cooker and allow running its course.
Fluff rice and serve.

*Please keep in mind that not all dried herbs and spices are gluten free so check the labels to make sure the brand you are using is gluten free. The same applies for prepackaged store-bought items, check the labels to be sure. If in doubt, call the toll free number on packaging to be safe and to make your cooking/eating experience truly gluten free.

  1. I made a half amount of this recipe for yesterday's dinner to pair with a BBQ spiced chicken breast and salad. Lots of excellent flavor and super easy. I did use brown rice which I half cooked before adding the other ingredients and it came out very well. Thanks Bea for a healthy and very tasty side dish. Made for For Your Consideration Tag Game.

  2. Made this dish last night and it was soooo easy in my rice cooker. The only change I made was to increase the amount of liquid as I was concerned that there would not be enough liquid. Turned out great. Nancy : )
