Ground deer
meat can be very dry and has a strong wild taste. To add moisture and flavor to
the ground meat I like to add raw minced bacon. This recipe is one of my
husband’s favorite way to enjoy a deer burger. We love a bit of heat so I add
hot pepper flakes to this; these can be omitted if you do not like spicy
burgers. These are small burger patties so if you like a hefty burger, use two
patties for one burger.
INGREDIENTS
12 ounces ground
venison
4 ounces
bacon, minced
2
tablespoons finely chopped onion
1
tablespoon prepared horseradish
1 teaspoon
prepared mustard
1/2
teaspoon garlic powder
1/2
teaspoon hot pepper flakes
4 GF hamburger
buns
DIRECTIONS
Mix
together the ground venison, minced bacon, onion, horseradish, mustard, garlic
powder and hot pepper flakes well; shape into four patties.
Pan fry or
grill until cooked through place on buns and top with your favorite toppings (A
meat thermometer should read 160 degrees when inserted in the middle of the
patty.)
Enjoy!
NOTE:
Depending on what type of bacon you are using, the addition of the bacon may
keep the meat pink, it might not look cooked but if it reads 160 degrees, it is
cooked!
